Breakfast Omelet Quesadilla

Would you believe me if I told you that I created this recipe on a whim? Sometimes the best foods are created when you least expect it. I was craving something different than I usually eat for breakfast, or in my case, brunch. I had a pack of tortillas that I did not want to go to waste. Along with some eggs, bacon and cheese. I also prefer omelets over scrambled eggs. Thus this breakfast omelet quesadilla was created! Of course breakfast quesadillas are not original but I made this with my own twist. Think of it like some sort of hybrid food. Call me Michaella the Scientist and step into my lab! haha

Disclaimer: I am not a breakfast person.

As much as I love food, eggs are on the lower spectrum of enjoyable foods. I prefer to skip right to lunch. However, even if you're not a breakfast person like me, this recipe will still be very satisfying and filling. What I love the most about this breakfast omelet quesadilla is that you can add your favorite fillings to it. After all, it is partially an omelet. It's the versatility for me! Without any further ado, watch the video tutorial of how to make this delicious, quick, and simple breakfast. Of course the recipe can be found below.
